Our food truck journey really started long before I ever owned one.
Growing up, I spent countless hours working alongside my dad at his restaurants, festivals, and food stands. He was one of the pioneers of the food truck industry in Minnesota, and from a young age I learned what hard work, customer service, and dedication looked like. At the time, I never imagined that one day I’d own my own food truck, but those experiences were shaping me more than I realized.
As an adult, I spent 13 years in the construction industry and owned my own handyman business. I loved working with my hands, solving problems, and building things for people. But after undergoing two back surgeries, I found myself at a crossroads. The physical demands of construction had taken a toll on my body, and I knew I needed to start thinking differently about the future.
That’s when my wife, Emily, stepped in with an idea that would change our lives. Emily is a registered nurse, and she saw an opportunity to create something unique in Minnesota’s food truck scene. She came up with the concept of focusing on loaded baked potatoes and building what would become Minnesota’s first baked potato food truck. What started as a conversation between husband and wife quickly turned into a dream that we couldn’t stop talking about.
Food trucks weren’t originally my dream or passion. Life had taken me down a different path, but the more we talked about the idea, the more excited we became. I was able to combine the work ethic and customer service lessons I learned from my dad with the entrepreneurial experience I gained from owning my own business. Together, Emily and I took a leap of faith and decided to build something completely new.
Today, Tater Top Food Truck is more than just a business to us. It’s a story of family, resilience, and taking a chance when life unexpectedly changes direction. One of the most rewarding parts of this journey is seeing our son, Keegan, now working alongside me just as I worked alongside my dad years ago. It’s a full-circle moment that reminds me how special this business really is.
The food truck industry has given us opportunities to meet incredible people, support local communities, and create lasting memories. What started with a nurse’s creative idea, a construction worker looking for a new chapter after two back surgeries, and generations of food service experience has turned into something truly amazing. We are proud to have built Minnesota’s first baked potato food truck, but even more proud of the family, friendships, and community that have grown around it. Looking back, what once seemed like an unexpected change in direction became one of the greatest blessings our family has ever experienced.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Like any small business, our journey hasn’t been without challenges. In fact, some of our biggest obstacles came before we ever served our first customer.
One of the biggest challenges was simply learning an entirely new industry. My background was in construction, where I spent 13 years running my own handyman business. While owning a business taught me a lot about customer service, problem-solving, and hard work, the food industry came with a completely different set of regulations, processes, and daily demands. There was a steep learning curve, and we spent countless hours researching, planning, and learning everything we could.
Another challenge was taking the leap of faith financially and personally. Starting a food truck requires a significant investment, and there are no guarantees of success. At the same time, I was recovering from two back surgeries and trying to determine what my next chapter would look like. There were definitely moments of uncertainty where we questioned whether we were making the right decision.
The day-to-day realities of operating a food truck also bring unique challenges. Weather can impact events, equipment can break unexpectedly, and every day presents new variables that are outside your control. We’ve learned very quickly that flexibility and problem-solving are essential in this industry.
One challenge we didn’t fully anticipate was the amount of work that happens behind the scenes. Most people see the few hours we’re serving customers, but they don’t see the food preparation, cleaning, maintenance, inventory management, scheduling, marketing, bookkeeping, and travel that happens before and after every event. Running a food truck is truly a lifestyle, not just a job.
Despite those challenges, every obstacle has helped us grow. We’ve learned to adapt, trust ourselves, and lean on each other as a family. My wife Emily and I built this business together, and facing challenges side by side has made us stronger both personally and professionally.
Looking back, the challenges are actually some of the things we’re most grateful for. They taught us resilience, helped us appreciate every milestone, and made every success that much more meaningful. Building Minnesota’s first baked potato food truck wasn’t easy, but overcoming those obstacles has made the journey incredibly rewarding.

In terms of your work and the industry, what are some of the changes you are expecting to see over the next five to ten years?
The food truck industry has evolved tremendously over the past decade, and I believe the next 5–10 years will bring even more growth and innovation. Food trucks are no longer viewed as a quick alternative to traditional restaurants—they’ve become destination dining experiences that many customers actively seek out.
One trend I see continuing is the demand for unique and specialized concepts. Customers are looking for something they can’t find everywhere else. That’s one of the reasons we built Tater Top around a concept that was completely unique to Minnesota. People want memorable experiences, creative menus, and businesses with a story behind them.
Technology will also continue to play a major role in the industry’s growth. Online ordering, loyalty programs, social media engagement, and real-time location tracking will become even more important. Customers want convenience, and food trucks that can connect with customers digitally while maintaining a personal touch will have a significant advantage.
I also believe we’ll see more partnerships between food trucks and businesses, breweries, hospitals, schools, corporate campuses, and community events. Organizations are increasingly recognizing the value food trucks bring by creating unique experiences for employees, customers, and guests without the overhead of traditional food service operations.
Another shift I anticipate is an increased focus on quality and professionalism. The most successful food trucks of the future won’t just serve great food—they’ll operate with the same standards, consistency, branding, and customer experience as top-tier restaurants. Customers have higher expectations than ever, and businesses that consistently exceed those expectations will thrive.
What excites me most is that despite all the changes, one thing will remain the same: people crave connection. Food has always brought people together, and food trucks have a unique ability to create that sense of community. Whether it’s at a local brewery, a hospital lunch stop, a festival, or a neighborhood event, food trucks create experiences that are personal and memorable.
