Today we’d like to introduce you to Jessica Freitag.
Hi Jessica, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
I attended Le Cordon Bleu Culinary Institute after graduating high school. After completing culinary school I worked for Marriott Hotels and several restaurants as a cook and server and also in banquets and large events. I was hired by D’Amico and Parters at Campiello in Eden Prairie as a server but soon took over the position as an assistant pastry chef. I spent two years working at twin cities and Naples, FL locations making the desserts for Campiello and Cafe Lurcat.
In 2008 I returned to southern Minnesota and was hired as the pastry chef for Mankato Independent Originals making desserts for multiple restaurants. I had been working here for 10 years when I opened my own Cottage Law business out of my house making wedding cakes and cupcakes. My business took off much faster than expected and in September of 2019, we opened our shop in Waseca, MN! We specialize in wedding cakes and desserts but also serve lunch and coffee.
We all face challenges, but looking back would you describe it as a relatively smooth road?
We opened 6 months before Covid hit so navigating the constant changes while learning how to run a new business has been challenging!
We’ve been impressed with Lush Cakes, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
We are a bakery specializing in wedding cakes and gourmet desserts! Our desserts and pastries are made from scratch in-house daily. We also serve lunch and delicious Dogwood Coffee Co. Coffee!
Is there any advice you’d like to share with our readers who might just be starting out?
