

Today we’d like to introduce you to Lindsay Henn.
Hi Lindsay, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start, maybe you can share some of your backstories with our readers?
Before opening this business, I worked in Occupational Therapy, but I had long dreamed of opening my own business one day. As a mother of three children, I always wished New Ulm had an ice cream shop to take them to. I love our downtown area and the community, so after many years of thinking about this idea, I finally decided to go for it. I was ready for a change and to be able to check off one of my dreams in this life. Although opening during covid had its challenges, the community of New Ulm embraced us, and I could see this amazing adventure unfold in front of me. It has been a joy, but my favorite part is seeing people of all ages coming in and making memories together. It is a place where people can forget their troubles and enjoy a sweet treat!
Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
The challenges of opening in a pandemic had their bumps along the way, but nothing we, as many other small businesses, couldn’t overcome. Now, I feel like if we can get through that, we can get through anything! As a community, we can come together and support each other in hard times.
As you know, we’re big fans of MN Eis Ice Cream & Sweets Shoppe. For our readers who might not be as familiar, what can you tell them about the brand?
Ice Cream is the main draw at MN EIS. We carry super-premium ice cream from Chocolate Shoppe Ice Cream Company out of Madison, WI. We offer 24 flavors on the rotation of nearly 100 flavors that Chocolate Shoppe offers. In addition to ice cream, we make our own fresh edible, safe-to-eat cookie dough in a variety of flavors. We also have a wall dedicated to various scoop bin candy- many fun and nostalgic, such as lemon drops, butterscotch buttons, and French burnt peanuts. We recently added Boba Tea (also known as bubble tea). This Taiwanese sweet tea drink has been trendy! Waffle Cones are homemade fresh daily, and not only do they taste great, but the smell when you walk in is delightful!
Our business has a German flair to it with its colors and names and offers German Spaghettieis in our shop. This authentic German treat includes whipped topping and vanilla ice cream that is pushed through a hand-operated spaetzle press to look like spaghetti noodles! We then top it with a fresh strawberry purée (the “spaghetti sauce”), grated white chocolate (“parmesan cheese”), and a homemade waffle cone heart. We added our twist by the option of adding “meatballs,” which is our homemade cookie dough. When complete, it looks like a big bowl of spaghetti!
Can you share something surprising about yourself?
Completing a full ironman distance triathlon sparked change in my life in 2018. By doing this, I learned that anything we put our minds to is truly possible, and there was a domino effect of actions I took that I may not otherwise have without going through that journey.
