Meet Daniel Tomczak of Lowertown, Saint Paul

Today we’d like to introduce you to Daniel Tomczak.

Hi Daniel, please kick things off for us with an introduction to yourself and your story.
I’ve been in the restaurant industry for over two decades, from dishwasher to kitchen manager. When covid closed down the restaurant I was last employed at, I decided to go into business for myself. Having dabbled with homemade hot sauce in the past that both friends and family enjoyed, I figured it was time to launch Studio 406 Provisions. I am a registered cottage food producer through the Minnesota Department of Agriculture, and as of late 2021, my company has become a fully trademarked limited liability company. By the end of 2022, I hope to acquire commercial kitchen space and ship my sauces nationwide.

Can you talk to us about the challenges and lessons you’ve learned along the way? Would you say it’s been easy or smooth in retrospect?
Covid was a challenge. Getting ingredients wasn’t always easy, especially during quarantine. There was a glass bottle shortage due to port congestion, so I often had to scramble to find bottles last minute. Also, our car was stolen last summer, along with my brand new canopy tent for outdoor sales events. That, along with medical issues, made last year quite the doozy. Luckily with the help of good friends and neighbors, we’ve managed to keep chugging along.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I’ve worked in restaurants for many years. I’ve brought that knowledge over those years to what I do now. I need flavors that stand out and aren’t just another run-of-the-mill copycat recipe. I’m also part of an amazing artist community. When I started this thing, my goal was to do everything in my power to make a great product and promote local artists. That’s why each of the sauces in my lineup features the work of a different local artist.

Is there a quality that you most attribute to your success?
Flavor overheat. But they are hot. Lol.
