Hi Caroline , it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
It all began one night in Lino Lakes. We used to do what we called Documentary Mondays, and one night we chose two that would change everything: Cowspiracy and Forks Over Knives. That night sparked the beginning of our No Meat May challange—and we never looked back.
As the days passed, we noticed powerful shifts in our lives: more energy, clearer skin, and a sharper mind. It quickly became clear this wasn’t just a phase or a trendy diet—it was a transformation. It felt like a light switch had flipped. This was our new normal.
Now, 10 years later, I’m proud to say I just celebrated my vegan anniversary!
Fueled by my passion for this lifestyle, I created an apparel line made with vegan materials and a bold message designed to spark curiosity and inspire conversation. I called it PLNT BSD. It’s led to some of the most meaningful, thought-provoking exchanges I’ve ever had—and it’s become a beautiful way to share the plant-based message with the world.
My love for healthy beautiful plant based food then morphed from the PLNT BSD brand apparel to my own smoothie trailer in downtown white bear lake. We have had 2 different mobile units and a brick and motor, and now we currently reside in the back space of Anchor Coffee/ Margaux kitchen (graciously) are open during the WBL farmers market (and other hours. ) It’s been a journey and something that has grown with me as I grow into my own human experience.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Along the way, we faced our share of challenges—one of the biggest being the decision to open our first brick-and-mortar location during the pandemic, all while I was newly postpartum. On top of that, I was learning how to lead a team for the first time. I was lucky to have an incredible group of people around me, but stepping into a leadership role was completely new territory. I had to grow quickly, both personally and professionally.
Through it all, I came to realize that the grass isn’t always greener, and bigger isn’t always better. Those experiences taught me to reevaluate what success truly means. Today, I have the freedom to set my own hours and, most importantly, to be fully present in my most meaningful role—being a parent. It’s a responsibility I hold with deep purpose and pride.

What sets PLNT BSD apart from other smoothie and smoothie bowl shops is the creativity and intention behind every dish. I wouldn’t call it luck, but the people that I have made connections with are my biggest supporters. My followers know what im putting out in the world and trust me, so I have to bring them the quality that they expect from me. They hold me to a standard and im grateful for them
