Check Out Pejmon Nadimi’s Story

Today we’d like to introduce you to Pejmon Nadimi, owner of the new Protagonist Kitchen & Bar.

Hi Pejmon, we’d love for you to start by introducing yourself.
I’m a nerd that was wandering aimlessly before I found my way back into the hospitality industry. I worked my way from barback to general manager. When the pandemic brought down the restaurant group that my business partner (Jahn Brink) and I worked for and we became unemployed we decided to try to open up a concept we had always talked about.

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey has been a fairly smooth road?
We opened up during covid, and a mess of supply chain issues. Rising costs of equipment goods, labor, and contractors. You name it, we dealt with it, haha!

Appreciate you sharing that. What else should we know about what you do?
I’ve had a passion for the industry my whole life. I spent the better part of the last ten years absorbing all the knowledge I could. Beer, cocktails, food. I’m admittedly lacking in the department of wine knowledge but I’m smart enough to ask for help from those who are much more knowledgeable than myself. My business partner’s (Jahn) strengths are the other areas that I lack. Operations, culinary background, and the eloquence and composure I don’t always exude.

So maybe we end on discussing what matters most to you and why?
An excellent dining experience. From the moment you enter, the ambiance, to the quality of the food and drink. So many of my favorite memories are great restaurant experiences and it’s so much more than just good food. So many of these experiences have had a profound effect on what I value in life and it’s a pleasure to be a part of it everyday.
