Hi Roberto, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
We started out as a cottage food business saling homemade flour and corn tortillas at the Saint Paul farmers market then later perfecting a rotating menu of farmed ingredients tacos depending on season all locally sourced . Tacos are authentic handmade shells with options of a breakfast taco or traditional tacos like pork carnitas and beef barbacoa all at our stand at the Saint Paul farmers market Saturdays & Sundays downtown Saint Paul Lowertown

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It was never a smooth road , often challenges learning curves in production to meet higher demand , and be productive , without loosing and keeping the authenticity in our product , but overall a great energetic experience and drive for success

Can you tell our readers more about what you do and what you think sets you apart from others?
We specialize in authentic flour and corn tortillas and known for local Minnesota sourced farmed tacos . We’re proud of our tortillas and proud to be members of the Saint Paul farmers market and the and relationships we have with vendors and customers . Our collaborative food naturally comes together in many colors and flavors , our corn tortillas in blue , red , yellow , or even green ,our flour tortillas a generational staple when heated creates the perfect puff eaten alone you can taste the buttery flaky tender bite of homemade goodness , our ingredients in all our tacos brighten up every taco which in summer time is sourced from fresh produce directly from the market ! You can see the beauty and love in our food and in our product , in the fact that it’s farmed and organic sets us apart from so many others and we’re able to do this in a public setting

The crisis has affected us all in different ways. How has it affected you and any important lessons or epiphanies you can share with us?
It was because of Covid pandemic and the idea to work from home. That launched us and landed us at the Saint Paul farmers market during the crisis. When times were down we spent a lot of time at home making tortillas for income and our t homemade flour tortillas were making people happy , We Found a way to bring the one thing that was our home staple to a local market to share that love and allow everyone to taste that nostalgia of what our Abuelita’s grandmothers and mothers made for us growing up , something we all remember too well and we have been Successful in delivering that feeling ever since .In the end it all about love .
