

Today, we’d like to introduce you to Hayley Walsh.
Hi Hayley, so excited to have you with us today. What can you tell us about your story?
I have always had a passion for baking, growing up helping out in the kitchen with my mom and my grandmas. I loved to watch every baking and cooking show out there, always made my friends have baking competitions, and was so excited when I got to make things for our church bake sale.
After high school, I attended French Pastry School and graduated in the fall of 2020. Since then, I’ve been working in the pastry industry and started my small business in the summer of 2021. In the fall of 2023, I opened my food truck, Lulu’s Crêpes & Croissants, where we sell sweet and savory crêpes and various pastries!
We all face challenges, but would you describe it as a relatively smooth road?
Learning to run a small business is no small task. I learn something new every day. I absolutely love the baking aspect of my job, but what many people don’t realize is how much work there is behind the scenes.
Learning to be a small business owner is learning to be multi faceted and have the ability to adapt on the spot. There is always a challenge for me to work through. This has made me stretch myself in new ways.
Huge respect to all small business owners, the bravery and commitment it takes to follow your dreams is an insane accomplishment.

Lulu’s Crêpes & Croissants is a food truck that brings delicious crêpes and pastries to the Twin Cities and beyond!
We specialize in traditional French street crêpes and sweet and savory-filled crêpes, including our ham and cheese crêpe, which is a fan favorite. We also have a rotating menu of pastries, in our case, at each event. It is our mission to bring joy, a fun atmosphere, and great food to every customer!
Is there anyone you’d like to thank or give credit to?
A huge thank you has to be made to my friends and family, who cheer me on every day, no matter what. As well as my many chef instructors at pastry school, including chef Jacquy Pfeiffer, who inspired me from a young age and helped me get into the pastry industry.
Most of all, I must thank my parents, Penny and Tony Walsh, who have helped me in every way possible. I truly think they do more work that I do some days. They have been with me every step of the way and have never made me feel like my dreams were too big to chase.
