Hidden Gems: Meet Caroline Kraft of Mabel’s Flower Truck

Today we’d like to introduce you to Caroline Kraft.

Hi Caroline, please kick things off for us with an introduction to yourself and your story.
Mabel’s Flower Truck started as a blend of a few things I love; creativity, community, and flowers. I was craving something hands-on and joyful, and I’ve always been drawn to the way flowers can brighten someone’s day or mark a moment.

The business is named after my dog Mabel, who was with me for 17 years and had a love for our truck that no one could beat. She brought so much light into my life, and it felt right to carry her spirit into this project. She even got to see the truck in action during its first summer, which is a memory I’ll always hold close.

What began as a small idea has grown into something really meaningful. Whether we’re at a market, private event, or driving through the neighborhood, it’s about more than just flowers – it’s about connection, creativity, and a little everyday joy!

We all face challenges, but looking back would you describe it as a relatively smooth road?
Let’s just say with a 1968 truck, “smooth road” isn’t exactly in our vocabulary! The journey has been full of bumps – literally and figuratively – but that’s part of what makes it memorable.

Like any small business, it’s been a learning curve. I didn’t come from a floral or mechanical background, so I’ve had to figure things out along the way from building flower arrangements to maneuvering an old truck through a city. Weather can also be a challenge; wind, rain, and heat all play a role when your storefront is on wheels and filled with delicate flower cargo.

But each hurdle has taught me something, and at the end of the day, I still feel lucky to do this. The joy it brings people makes the hard parts worth it!

Alright, so let’s switch gears a bit and talk business. What should we know?
Mabel’s Flower Truck is a mobile flower shop housed in a vintage ’68 Chevy pickup, serving the Twin Cities community through pop-up events and private gatherings. We specialize in pre-made, locally and seasonally inspired bouquets at our pop-up markets that are hand-crafted and ready to go while also offering a more customizable bouquet experience for private events like birthday parties, showers, or company functions.
In addition to the truck, we also offer flower arrangements without the truck. Creating something special for events that need a floral touch but not the full truck setup. Whether it’s a bouquet for an elopement or table arrangements for a birthday, we aim to make it meaningful and beautiful.
What sets us apart is the experience and heart behind everything we do. The truck brings a dose of nostalgia and joy, and our brand is rooted in making flowers approachable, fun, and designed just for you.

What would you say have been one of the most important lessons you’ve learned?
One of the biggest lessons I’ve learned is that things don’t have to be perfect to be meaningful. Starting a small business, especially one run out of a 50+ year-old truck, comes with so many unknowns and little challenges. But over time, I’ve learned to embrace the imperfection, stay flexible, and trust that the heart behind the work will always shine through.
People connect with the experience, the intention, and the joy and letting go of perfection and leaning into authenticity has made the journey not only more sustainable, but way more enjoyable.
