Hidden Gems: Meet Dalton Shirley & Megan Redlin of Novios Café

Today we’d like to introduce you to Dalton Shirley & Megan Redlin

Hi Dalton Shirley & , can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Dalton had worked for Dennis Wong, the former owner, since 2011. He has worked as a cook, barista, roaster, assistant manager, and general manager. Megan worked part time as a barista since 2019. One day while Dalton was roasting coffee beans, Dennis approached him and asked if he would be interested in buying the store, and the rest is history. It’s funny because we met while Dalton was roasting. Looks like the best things happen to him when he’s in coffee shops!

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Any time that you try something new, there will be challenges. Restaurants take a lot of drive, consistency, team work, and communication. While there haven’t been any major issues, there are always challenges and pressures to do well.

As you know, we’re big fans of Novios Café. For our readers who might not be as familiar what can you tell them about the brand?
Novios Café is a locally owned and operated coffee shop in Rochester, Minnesota. We specialize in crafted coffee beverages, breakfast, and lunch. We roast all of our coffee beans on-site in small batches, which helps us ensure that each cup of coffee is fresh and flavorful. This is certainly our pride and joy.

We also offer a selection of beer, wine, and mimosas so we like to think that the café is a good place to hang out in the afternoons for those who don’t always want the extra caffeine after 4:00 PM. Our wine list is on the smaller side, so it’s easy to find something to love.

So maybe we end on discussing what matters most to you and why?
Quality and connections. We want to create a space where people want to spend their time–either alone or with others. Our big thing is connections and community, as we know many of our regular customers by name. We want to keep that trend going because we know how special it is to have a home away from home.
