Hidden Gems: Meet Emily Richter of Fit Foodie Finds

Today we’d like to introduce you to Emily Richter

Hi Emily, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
Hodgepodge, the new food truck collaboration from Forgotten Star Brewing Co. and Fit Foodie Finds, the women-led food website, opened its doors May 2024. Located at Forgotten Star Brewing, this permanent food truck is saucing up the Midwest food truck scene with its indulgent, yet balanced options.

United by their shared goal of delivering amazing experiences to people, the teams at Fit Foodie Finds and Forgotten Star Brewing are embracing their different backgrounds to redefine the food truck experience with a variety of approachable options for those looking for lighter eats, to those looking to sit down and savor.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Nothing ever is! 🙂 It’s been a challenge bringing different working styles together and hiring in the often high-turnover food space. Summer is also the busiest season for the brewery with lots of events, so we jumped right into a thriving but super busy lunch and dinner rush.

Appreciate you sharing that. What should we know about Fit Foodie Finds?
Lee Funke founded Fit Foodie Finds in 2010 when she was an undergraduate at the University of Minnesota as a way to share her love for real food and wellness online. The internet has changed so much since then, and so has Fit Foodie Finds. Today, we’re a female-owned and operated million dollar business. Our recipes reach millions of you every month, and our Instagram following of 335k+ will inspire you with everything from our delicious recipes to a glimpse into Lee’s life.

Linley Hanson joined the team in 2014, and has lended her extensive cooking and recipe development skills to every recipe since. She has an incredible palate, and loves creating unique and nourishing recipes. Emily Richter joined the team in 2015, managing brand partnerships and sponsored content. A writer by trade, she now serves as our editor in chief, writing and editing content on the website.

What’s next?
We’re looking forward to launching seasonal menus and collaborating with the brewery to create customized menus for their events.
