Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
I had a successful career in finance with a number of Fortune 500 companies and just started making macarons at home for fun back in 2012. I knew macarons were a very hard dessert to make so I was up for the challenge. I started taking them to work and sharing with co-workers, then I was asked to provide macarons for a wedding in 2013 and the rest is history. I continued working my full time job and made macarons on nights and weekends for 5 years until it came to a point that it made more economic sense to just focus on macarons and quit my job. I purchased the building in 2018, going all in on the business and focusing on online ordering and shipping. When Covid came it actually grew the business more being people watched more baking shows and tried making them at home so they knew how hard it was and ordered online. I purchased another building in St. Paul to grow our retail presence in 2020 and got a 1963 vintage food truck for festivals and fairs. I also purchased another building in Hopkins and now utilize all 3 spaces as fractional rental kitchens, helping start up entrepreneurs with space with another business that I run with my husband called MSP Kitchenery.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Being an entrepreneur is an amazing adventure of highs and lows and curves all along the way – you have to be very quick on how to react to these situations and it is a constant journey of learning. 7 years ago, I had quit my corporate career and went 100% in on my macaron business. We had just purchased/closed on our commercial kitchen in Plymouth and went to Europe immediately after to celebrate and get inspiration. The day we came home, a portion of the roof had developed a hole and caved in from a massive rainstorm. We had to have the entire roof replaced, however had to patch it temporarily ourselves immediately after landing back home – lots of sleepless nights until it was redone. We laugh about it now, but at that point, I was like…what did I get myself into 🙂

We’ve been impressed with Nikkolette’s Macarons, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Nikkolette’s Macarons specializes only in French Macarons. I am laser focused on making the best macaron and use only the freshest quality ingredients! And since they are made with almond flour, macarons are naturally gluten free. We do lots of weddings, corporate events, bridal/baby showers and other celebrations. We offer nationwide shipping for a perfect birthday, corporate or holiday gift. We also utilize food printing technology so we are able to print company logos, messages, etc.

If you’re looking for a way to impress a special person in your life, to wow your wedding guests, we take our business very seriously and you will be delighted with our execution.

We also believe in giving back to our community by creating kitchen facilities for other entrepreneurs to get started through my other company MSP Kitchenery, we sell their products at our 2 locations as well in St. Paul and Plymouth and enjoy seeing their growth and success!

If you had to, what characteristic of yours would you give the most credit to?
Curiosity: I am naturally a curious person who likes to solve complicated and intricate puzzles. I am always striving to learn more and do more for my community. Tenacity: There are many ups and downs in Entrepreneurship, however being able to push through and not give up is something that has really helped me grow
Courage: Jumping into the unknown from a great stable career was tough but as time has gone along I realized that although it isn’t easy I really enjoyed driving and doing new things. And with that, you have to have a strong belief in yourself as well as a strong support system around you.
