Inspiring Conversations with Meagan Struck of Willow Flour

Today we’d like to introduce you to Meagan Struck.

Hi Meagan, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Our story began with a simple question: Why don’t I feel good after eating something as basic as bread? Thirteen years ago, I (Meagan) was experiencing daily headaches, anxiety, fatigue, and digestive issues. As a natural researcher, I started digging for answers, and that led to a deep overhaul of what we ate, what we used in our home, and how we lived.
That journey pointed to wheat—and more importantly, the difference between American and European flour. When we tried French flour, the difference was immediate: the bread rose beautifully, our kids felt better, and our home smelled like real food again. We knew others must be looking for this too. That’s when Willow Flour was born: clean, French-grown, naturally lower-gluten flour imported to Minnesota and made available to families just like ours.
But in many ways, this story started long before our health issues. Looking back, it’s amazing to see how small and seemingly insignificant parts of our past were preparing us for this. As kids, both Ben and I spent countless hours outdoors, creating, exploring, and loving stories and adventure. That sense of curiosity and connection still drives us—and it’s what we want to instill in our kids today.
Even the classes that felt impractical at the time—my four years of French in high school (thank you, Madame T!), or the undergrad entrepreneurship course I thought I’d never use—have played a surprising role in building this dream.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Not at all. We launched Willow Flour in a whirlwind season—raising three young kids, working full-time jobs, newly postpartum, and selling our home to move into a multi-generational space with my parents. It was uncomfortable, humbling, and stretching in every way. But it also allowed us to realign our lives around the things that mattered most: family, simplicity, faith, and intentional time together.
We’ve faced steep challenges: regulatory barriers, packaging design, import logistics, and especially education—helping people understand that Willow Flour is something different. It’s not gluten-free, but it’s naturally lower in gluten. It’s not your standard American flour, but it works seamlessly in everyday baking.
The biggest hurdle? Getting that first bag into people’s hands. Because once they try it—they feel the difference.

Alright, so let’s switch gears a bit and talk business. What should we know?
Willow Flour is clean, thoughtfully sourced French flour that makes people feel good. It’s grown in nutrient-rich French soil, where glyphosate and synthetic additives are often banned and rarely found, and milled with the care and tradition the French are known for. It’s an all-purpose flour with a lighter feel, easier on digestion—especially for those with gluten sensitivity or inflammation. While many of our customers with gluten sensitivity have found Willow Flour to be a gentler, easier-to-digest alternative to conventional American flour, it is not certified gluten-free. Our hope is to offer a cleaner, more nourishing option for those who are seeking to feel better—but we want you to feel safe and supported in your wellness journey.
But more than that, Willow Flour is about what happens around the table. We believe in slowing down, eating together, and creating rhythms that nourish both body and soul. The best memories are made in the kitchen, and better food doesn’t have to be a burden.
We’re proud to be a family-run business built on faith, intentionality, and a whole lot of grit. Our proudest moments come from messages like: “I haven’t baked in years… and now I can again.” That’s the kind of impact that keeps us going.

Can you tell us more about what you were like growing up?
I (Meagan) have always been introspective, creative, and interested in wellness and the “why” behind things. I’ve always had a deep love for nature, stories, and understanding how things connect. Ben is a deep thinker and shares that same love for creating, exploring, and being outside.
As a couple, our relationship has always been about dreaming together—sharing what we hope for our family and being willing to take risks to pursue it. We don’t know how much time we each have, and we want to spend it being present with our kids, living aligned with our values, and saying yes to meaningful adventure.
