Life & Work with Rolando Diaz

Today we’d like to introduce you to Rolando Diaz. 

Hi Rolando, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Came from Costa Rica 19 years ago, my mother and uncles worked for my grandfather as kids in his restaurant so I grew up with great authentic food. After I came here, I worked in various restaurants to learn the cuisine and English. After some years I started doing private Chef events in homes until eventually, we found ourselves doing larger events such as corporate, graduations, and weddings when we started Marnas Catering back in 2010. Now we cater over 130 weddings per year plus some other smaller events. 

We also opened Marnas Eatery and Lounge in 2019, serving authentic Costa Rica-influenced cuisine with a full bar and Marnas bakery in Costa Rica 2020.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Like every business, beginning is not easy, especially growing up in a different country. I learned English within 6 months which helped me get ahead but I had a lot of challenges learning the ways here in US, permits, process, licenses, and what people really liked in terms of food and service that was probably the biggest struggle at the beginning. 

Appreciate you sharing that. What else should we know about what you do?
A Chef entrepreneur. Proud to have been the best of weddings since 2015 in a row in Minnesota. 

We are known for many things but our service and food for weddings sets up apart. 

Is there a quality that you most attribute to your success?
Quick turnaround communication to our clients during events and accurate delivery.
