Meet Sammi Loo of Ootori Sushi, Mezza9 Cafe & Desserts , Bebap Korean Eats & 1928 Cocktails and Bites

Hi Sammi, we’d love for you to start by introducing yourself.
I moved to Rochester in 2005, where I laid the foundation for my family and embarked on an exciting entrepreneurial journey. In 2008, I opened my first venture, Sushi Nishiki, a sushi restaurant that aimed to bring authentic flavors to our community. Although Sushi Nishiki later closed, the experience paved the way for my next adventure.
In 2016, I launched Ootori Sushi, building upon what I had learned and refining my passion for sushi. This restaurant quickly became a beloved spot for both locals and visitors.
As my family and business grew, I decided to diversify my offerings. In 2022, I opened Mezza9 Cafe and Desserts, a cozy café where people could gather to enjoy delightful beverages and tempting desserts. The following year, I expanded my culinary horizons once again with the introduction of Bebap Korean Eats, a Korean-inspired eatery that celebrates rich flavors and vibrant dishes.
Most. recently, in 2024, I opened 1928 Cocktails Bar, a stylish venue that offers expertly crafted cocktails in a warm and inviting atmosphere. Each of these establishments reflects my passion for food and my commitment to serving the Rochester community.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
While my journey as an entrepreneur in Rochester has been fulfilling, it has certainly not been without its challenges. Opening my first restaurant, Sushi Nishiki, in 2008 was a dream come true, but it came with its fair share of obstacles. Navigating the complexities of establishing a new business—from securing financing to finding the right location—was a daunting task. Additionally, competing in the restaurant market, especially during economic downturns, posed significant challenges.
After the closure of Sushi Nishiki, I faced the tough decision of closing a beloved establishment. This experience taught me valuable lessons about resilience and adaptability. It was a difficult time, but it also fueled my determination to create something even better.
When I opened Ootori Sushi in 2016, I was more prepared, but new challenges arose. Building a loyal customer base took time, and maintaining consistent quality and service in a competitive landscape was essential. Every day was a balancing act of managing supplies, staff, and customer expectations.
Expanding my business further in 2022 with Mezza9 Cafe and Desserts required a shift in mindset. Adapting to a café environment, with its focus on a diverse menu and a different pace of service, was a learning curve. I had to master new operational procedures and marketing strategies to attract a different kind of clientele.
The launch of Bebap Korean Eats in 2023 presented its own hurdles, including sourcing authentic ingredients and training staff to ensure a high standard of quality. Additionally, entering a new culinary niche meant I had to invest time and effort into understanding the preferences and tastes of a different demographic.
Finally, opening 1928 Cocktails Bar in 2024 brought about fresh challenges, from crafting a unique cocktail menu to creating an inviting atmosphere. Juggling multiple businesses often meant long hours and constant problem-solving.
Through it all, the struggles have taught me resilience, adaptability, and the importance of learning from each setback. Each challenge has ultimately contributed to my growth as a business owner and has deepened my commitment to providing exceptional dining experiences in Rochester.

In addition to these classics, Bebap also offers unique Korean-inspired dishes such as saamjang pasta, perilla pasta, branzino fish, and kimchi arancini. What I Like Best About Rochester

One of the things I appreciate most about Rochester is its strong sense of community. The people here are incredibly welcoming and supportive, fostering an environment where local businesses can thrive. The city has a vibrant arts and culture scene, with numerous events, festivals, and local markets that bring residents together and celebrate our diverse backgrounds.
Additionally, I love the natural beauty surrounding Rochester. The parks, and nearby outdoor recreational spaces provide wonderful opportunities for activities and relaxation, making it a great place for families and individuals alike.

What I Like Least About Rochester

On the flip side, one challenge I see in Rochester is the seasonal weather. Winters can be long and harsh, which can affect foot traffic and overall business activity during those colder months. While many residents embrace the winter activities, the weather can sometimes be a barrier for visitors and new businesses trying to establish themselves.
Despite this, I remain optimistic about our city’s potential and look forward to seeing continued growth and community engagement that can help overcome such challenges.
