Rising Stars: Meet Marcy Baumann

Today we’d like to introduce you to Marcy Baumann.

Hi Marcy, please kick things off for us with an introduction to yourself and your story.
We hail from Germany (Reinhart) and Kansas via Sweden (Marcy) but have called the Twin Cities home since 2001. Our food, ambiance, and boutique are intentionally simple as is the norm in the lands that we love.

Owning a coffee haus started as a dream that came from enjoying amazing coffee shops on the East Coast and Europe. Over the years Marcy made lists of what she loved and wanted to include in her “dream”. In 2019, Marcy stepped down from her position as a pastor and started working on making the dream a reality.

Today we are one of the most sought out locations in the South Metro. We are a destination for anyone wanting to have a meeting (business and personal), or find a gift that their KNOW will be unique.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
We started with nothing. SO, our remodeling was slow and done as money was available by volunteers as often as possible (oftentimes teenagers or retired folks). We had to learn everything as we went, and relied on the professionals to share their wisdom which they did very generously. The MN Department of Health held our hand as we designed the kitchen and their patience with us was such a blessing.

Finding vendors for our boutique is a constant challenge as we want to be sure our items are unique with a balance of price ranges. We want a certain percentage of local artists, give-back items, European, and unique items with whimsy. We create items in house as well as source items from every growing list of amazing vendors.

Finding volunteers and staffing has been a challenge. We only hire people that truly care for others, we need our customers to feel seen and cared for when they step in our space. We figure we can teach anyone how to make espresso, but that genuine heartfelt concern for others is something special.

Thanks – so what else should our readers know about your work and what you’re currently focused on?
We are a local, family run, coffee haus and boutique. We are in the heart of Eagan and ultimately want to be THE HEART of Eagan. We want to be the place people come to have hard conversations and long overdue reunions, so the music is quiet, the seating is spacious and comfortable, and the pace is relaxed. We want to be the place where you can finish the book you’ve been putting off or the thesis you’re trying to knock out in one of our conference rooms or at one of our work areas. We go out of our way to employ adults with disabilities as we find our world is made brighter by their contributions. Marcy is a Chaplain with the Eagan Police Department, so those connections have made it possible for our presence in the community to extend beyond our brick and mortar space. We have a number of people volunteer, just because they want to be a part of what happens in these walls full of good food, beautiful items, and amazing community. We are intentionally simple, and the authenticity gives everyone a sense of being at their home away from home.

Can you talk to us a bit about the role of luck?
We opened our European boutique & coffee haus on February 20, 2020. We were forced to closed due to COVID 19 on March 16, 2020. We were open for 4 weeks, without the opportunity to make a name for ourselves, before being fully to partially closed for the next year. But we survived, primarily due to volunteers stepping in to fill the orders and our community rallying behind small businesses.
